Ceviche

- thinly sliced fish of choice. The firmer the meat, the better (Gold spot trevally for example).

- 2 lemon to 1 orange ratio. Enough to cover all the meat. The longer you leave it, the more the meat will cook with the acidity of citrus.

- Salt. A lot!

- thinly sliced red onions

- herbs of choice (parsley is a good option)
